Pick a gear on your current ride, that you find comfortable on the flats. Stay in that gear (voila..SS) and see if u can grind up the hills. When you find the right gear...go fixed.
+1 - but go single-speed and take advantage of those hills.

rode up that route a few weeks ago, no problem on 50 x 21 fixed on a fully equiped, ie mudguards, 2 brakes, lights etc, bike and I've got a bus pass and a beer gut

Went for it. Langster 2010 should be here in a few days. Will let you know how I get on with the hill!
Hopefully it won't b quite so cold the rest of this week, rode to work in shorts yesterday, didn't realise it was -7C outside!!

It is only 6%. Swains Lane is 14% and you can get up that ok with 70gi.
Fixed is also quite nice up hills

I'm currently on a Specialised Tricross running a 70ish GI. Brimble Hill is a bit of a hassle near the top although I do come at it from the back route passed the Brown Jockey. A 67 should be more confortable for the daily slog and still allow a decent speed on the flats. If you're planning on riding out around the area on fixed or ss then I wouldn't advise going above 70 unless you're pretty tough, experienced and determined.

Well the langster comes with 42/16T, with 69GI, might be a bit tough. How much are cogs? Getting a 41T would bring the GI to 67.3, would that make much difference?

Knee warmers, yes. 20 miles in sub-zero temperatures and I have started noticing my knees don't feel quite right by the time I get home. Not really worth the risk to the joints... -

Buy some top-of-the-range, carbon soled, road shoes. The idea of scrapping them up, walking up hills, will keep you honest ;)
could always get a surly dingle and two front chainring.
