I've only skied in France and Switzerland so can't give any reccomendations for Austria I'm afraid.
Val Thorens is a pretty crap resort, I get the impression that it was built as a ski resort only, rather than somewhere that was a little village some time ago and has managed to retain some character and atmosphere. But it's easy to ski over into Meribel and Courcheval so there is a massive ski area, which is one of the reasons we decided to go there.
Most places in France are pretty expensive to drink out (around 5 Euros a beer) but if you drink in your room before going out its much cheaper.
