why do single speed riders use toe clips rather than clipless (clip in) pedals?it's just one of those eternal questions that we'll never know the answer to. But damn I want an answer.

Why not? They're loads cheaper and a lot of people find them more convenient than clipless.
I don't think I really understand the question. What are your thoughts on geared riders using clips? How is it different?

At first I thought toe clips and straps were a useless idea and found SPDs much more useful. But I've now found it really inconvenient to have to use the flat side of my dual-purpose pedals with no retention if I'm going somewhere where I need to wear normal shoes, i.e. a lecture...

Cos they crash all the time and want to be able to hop out of their pedals toot sweet, when it all goes a bit pear shaped. FACT!

If I were to take a guess, I would suspect that in general SPDs on fixed are more common for those that have come to gearless from other serious forms of cycling (racing, MTBs, long distance riding etc).
SPDs can also feel a bit wierd when braking.

i know someone that ride clip/straps on the fix, flats on the single speed and clipless on the road bike. he's amazing and should serve as a beacon of wonder for the rest of humanity.
