i ride ss and stopping with only the front brake is fine, if you dont want to stop so sharply then dont squeeze the lever so hard! (note i have brake on front and rear)

Yes if you were lazy you could unlace the rear hub and rebuild with a coaster braked hub. Me, I prefer the long way round. I'd fit a standard rear caliper using the rear drilling and the cable stops on the frame :)
