I'd say Stanley Street in Central would be a good bet... Go to Skyphoto and try and deal with Ricky, nice guy!
I'd recommend eating in Sushi Kuu some day, it's in Wellington Place. Also if you have someone who reads Chinese with you go to Luk Yu teahouse for a pretty authentic old school chinese tea house, also on Stanley Street, for Dim Sum, they do have an Engrish menu but it makes no sense...
If you want to go clubbing and go somewhere fancy I'd recommend Dragon-i on Wyndham Street in Lan Kwai Fong, it's pretty cool but mad expensive, I wasn't paying for anything when I was there but it's just magnums of champagne left right and centre and some serious messiness!
If you want a really good Sunday Dim Sum I'd recommend Fook Lam Moon which is in Wan Chai.
