I don't know about the bike shopping but I've just come back from there myself
if you want to see the Ufitizi buy a ticket the day before from the ticket booth the other side of the monster queue and go the next day and spend your 3 hours doing something nice. It's really easy to find the non tourist places to and have some cracking food and wine at good prices.
Pisa is nice for the square and that's it.
