Firstly, thank god your not both seriously injured. Your girl will get over it - she's traumatised but it will pass with time. The bike doesn't matter - its a piece of metal with some rubber bits and can always be replaced / repaired.
My main point is that if this ever happens to you again in the future, let them take the bike. As mentioned earlier in the thread, a £400 otp bike isn't worth getting stabbed for (although to be honest a £2000 bike isn't either). Well done for standing up for yourself but all it would have taken was a boot in the head from just 1 of the 16 and you could be dead or brain damaged.
It really isn't worth getting into a life threatening situation with multiple attackers over a bike of any value. Your life is more important and sadly the kind of people that commit these crimes dont give a f**k about it.
I also ride along that canal path regularly myself and will be extra cautious from now on.
