I remember seeing a saddle that had been recovered by someone on the forum, but can't remember who it was.
I've stumbled across this: http://www.instructables.com/id/Cover-your-worn-bicycle-saddle-with-real-leather/ but have never given it a go though. When my rolls gives up the ghost I'll definitely try a recover it.
