New SS build - Specs, suggestions, etc

So, I am currently amassing parts for my first single-speed road bike.

Here's the theoretical spec:

FRAME - On One Il Pompino XL (57cm)
FORK - 3T Funda Carbon
RIMS - Velocity Deep V (OWN)
HUBS - Miche or Surly
SPOKES - DT Swiss
TYRES - Continental ???
CRANKSET - Miche Pista
PEDALS - Burgtec Penthouse Flats (OWN)
SADDLE - SDG Bel-Air RL (Titanium rails, Tiger print) (OWN)
SEATPOST - Thomson Elite 27.2 x 410mm
STEM - Thomson Elite X4 100mm x 0*
BARS - ??? 46cm
BRAKES - Shimano XTR BR-M960 Rear V-Brake (OWN)
HEADSET - CHRIS KING NoThreadSet 1 1/8th (OWN)
SEAT CLAMP - Woodman Deathgrip 29.8mm
BAR TAPE - ???

Now, questions:

1. Does anyone have an XL Pompino in BLUE which they want to sell me?
   
2. Which are the better hubs, Miche or Surly? I'm looking for strength. Anything else I should consider?
   
3. What length crankset should I be looking at getting?
   
4. What are some good, strong, Over-sized handlebars? Was looking at Deda Zero's, but they're a bit pricey and can't find any second hand.
   
5. Any other suggestions/changes to spec? I want a bomb-proof SS road bike that's still going to be fast as hell. I'm 6ft4 and 95kg if that makes any difference to anything.
