Are we distinguishing between score and soundtrack?
It's perhaps a little... whimsical but I bloody love Yann Tiersens work - saw him on tour in 2006 and he blew me away. So:
Amelie, Goodbye Lenin, Tabarly etc.
His live stuff is actually much "rockier" and less accordion based - very guitarcentric so I can understand that some might find one of his styles preferable to the other.
But personally I reckon the best soundtrack EVER (science fact) is for... drumroll....
