What's for dinner?

Pickled or soaked? Eww. Who do you take me for? Fresh, locally sourced (about quarter of a mile away?) beetroot grated into stock and slowly transfered into the rice. Then some mascarpone, butter and parmesan melted into the mix, dollop of extra mascarpone on top and a bit of dill = WIN:
