Use the Pentax P30, it's pretty automatic which help for the first time shooting, and then change it to manual.
secondly, you're right, you don't need lots of stuff, you just need a lightbox, and that what cameras are, merely a lightbox, it's your eyes that is important, as long you have a lightbox, you can capture what you see.
thirdly, come to south drink if you can, I can give you some tips and pointer about shooting film.
