@Scott I think the key thing with a saddle bag will be getting a decent way of stopping it swinging and not fouling the back of the thighs. I'm intrigued to see what you come up with.
Yeah, anything over a certain size is tricky without using plastic/metal frames.
I'm thinking a good use of compression straps might help....cinch everything down once you've filled it...then just pop the buckles again when you need to get into it.
