I've had issues with 'stretched' kevlar beaded mtb tyres in the past being pricks to fit flat without pinching the tube. It sounds like the same thing.. basically you need to get the installation right so there is NO tube poking out under the bead when you inflate it. Try putting a little air into the tube before fitting it under the tyre. Work it into the tyre, fit tyre fully, inflate a bit more and check that the tyre sits flat by spinning the wheel and eying it - if it bumps, start again, if not continue inflating.
