As above - Cycleogical sell high end stuff. Most of their clientele seem to drop significant amounts of money on carbon dentist machines. Fixed gear riders are unlikely to (a) buy in large enough quantities or (b) become popular to the degree that it's an important part of their business. But they're one of the only bike places (outside the net) where I can get tools & bits and pieces and don't have to explain what a fixed gear bike is.
In my experience, Dublin doesn't really have any bike shops with a focus on fg/ss cycling, certainly not to compare with the sort of places in London or the US. So, bearing that in mind, if you can find any bike shop where the staff are even halfway bothered to help you out, you're doing well.
