Descale it, which is easier said than done, by using the blunt side of a knife and forcefully dragging it from tail to head. You will find scales for weeks afterwards dotted around the place. Gut it in the normal way then roast in foil with some white wine. Lovely.

heh just read this, yes we are still finding scales! It was lovely we had it roasted with a herb puree and butter based sauce. Then rhubarb crumble for afters!
