when you get the hub, new or old, open it up and get as much grease in there as you can, so it's oozing out, this will help!

Nothing wrong with un-sealed bearings, they have been around for much longer that sealed and people never had problems.

If you are worried out weather damage, lithium grease on the races, then pack out the rest with water pump grease, then you will be good for a couple of years use completely submerged in water.
