Not so much racing in drag (although you'd be more than welcome to), as racing drag sprint style side by side. Figure this would make an interesting change from track time, TTs and longer rides.
There's a section of cycle path that runs along the Thames just to the East of the Dome which we cycled along on the Docklands ride (see linked map below for rough idea). We could set up side by side sprints along here with riders keeping to their respective sides of the track (no wheel sucking...) with timed runs (top times go through to the elimination rounds) and a checkered flag finish
Given that it's a bit out of the way, we might even be able to set up a sound system without drawing too much attention from the powers that be. Figure string up some bunting along the course and maybe even a bbq
