You should just be able to bend the race blade stays, after all seat stays are not at a constant angle, geometry and size of bike has more of an influence than 27" vs 700c.
I have full gards on my 27" -> 700c bike. It's fine. They work much better than race blades + they take up the gap well as prav said. Yes you may have to tweak the front mudguard by extending the bit that bolts onto the fork crown.
