A French director who doesn't seem to have been mentioned yet is Jean-Pierre Melville.
I'd recommend Bob Le Flambeur; Le Doulous; Le Samouri; Le Circle Rouge.
These are all brilliant gangster/noir films - if you're tired of the typical American stuff, these rule. (I also reckon you should try and watch these on as big a screen as possible.)
Someone Italian who I don't think has come up yet: Visconti. Ossessione and Rocco And His Brothers are both gripping.
There's a ton of stuff out there.. if it's French and Italian you're particularly after, Artifical Eye and the BFI are probably the best distributors to look for.
I might post a few more up another time as to be honest it's just a joy even thinking about all the great films that have come out of France and Italy.
