Oddly enough, not actually true. Admittedly when I did this we didn't get the usual prevailing westerlies and it rained a lot but there is stuff out there to see. Is best to hug the northern edge of the prairies though.
I was bored to tears driving this as a kid (moving from Edmonton to Toronto - born in Saskatchewan! Represent!). But to be fair, I get bored to tears when my friends tell me about taking the bus from Montreal to Saskatoon (which sounds more like prison).
Anyway, you had a good experience which is awesome. I still stand by the statement that it is flat, it is rather plain (to put it lightly), and it is usually windy. Not my idea of fun.
