I go to uwe, just at home in Newcastle for the summer.
But will say, check out http://www.boolsbicycles.co.uk/, a new-ish small bike shop in Fishponds.
They do custom builds and the guy who runs it specialises in fixed-gears/single speeds.
Went there for my build, quality service and a very good price, and only took about 3 weeks. definetly reccomend it to others who are hoping to go to a bike shop for a custom build.
