I bought a Touche a month or two ago and am really happy with it so far. Would recommend upgrading the chain and tyres (£8 and £20 for the pair extra) as the stock stuff isn't great but other than that they are a great bike!
The stock gearing (48/18) is perfect in London and has taken me to Brighton and done loads of laps of Richmond Park so should be about right in Manchester as long as you aren't on too hilly a commute. -

Those bullhorns help climbing hills and locking the back wheel at speed when riding fixed - easier to balance your weight over the front wheel to rise the rear.
I don't quite understand why people feel that bullhorns help climbing hills?

Neither do I. They're better than flats/risers, due to hand orientation bringing certain muscles into effect, and they get you forward a bit (like climbing on the hoods), but they're too flexy for my tastes.

I got the standard drops on mine as there are more hand positions and much better in traffic

I got a Touche sent to me here in Tokyo--maybe a bit weird but I wanted to stand out from all the keirin bikes. To my surprise, I saw another one in Marunouchi a few weeks ago. I got the blue one and paid a bit extra for a carbon seatpost and better tyres. I use the standard bars and really love it. It's my first single speed bike and has been great for getting fit since I switched it to fixed. I'm now interested in getting a locally made bike too, but am not sure where I'll keep it.

I'm about 5'6" with a 29/30" inside leg so I'm going to order a 52cm frame. I've tried to find a bike shop that is local with a 52cm road bike with similar dimensions in stock but it seems most stock 54's and they would have to order a 52 in for a shorty like me.
Anyone of a similar height got a Touche?

52cm sounds about right. But, instead of guessing, give Pearson's a call. They're super helpful and will be able to advise on sizing.

I'll steer clear of robes on my rides from now on :)
