Shimano and Campag 10 speed should work reasonably well.
Campag stuff is so much cheaper to upgrade and replace.
fulcrum wheels are made by Campag, so no surprise that you can buy a replacement cassette in Shimano or Campagnolo.
Cheapest option, if you build your own wheels would be to swap out the rear hub and replace with 2008 Campag Mirage which is cheap, light and has cartridge bearings so is going to be really easy to service. I bought a whole new rear wheel pre-built Miragoe onto Open Pro DT DB SS spokes for £75, so it's not so expensive.
