The best "feature" to have on a single speed and especially fixed gear bike is rigidity.
Steel is by volume much more rigid.
Which means you can have a slinky lean frame (or a classic lugged "traditional" look) which feels superbly responsive and agile to ride.
You can obviously get the same rigidity out of an aluminium frame, but they obviously have to be a lot fatter.
The specialized langster for example, looks like a turdalicious generic taiwan modern gizmoed up road frame discarded from halfords and stripped of its only decent parts (the gears).
