Turkish coffee froths up like that on the hob. If it's too hot then it'll die down as soon as its off the heat. The trick is to have it on a lower heat and to keep stirring the top inch or so of coffee as it is comes to the boil. Then when you pour the froth remains. Add turkish delight and a ciggie, and life tastes great!
