i ride ss off-road, used to ride it on road too and had a ' dinglespeed' 2 cogs and 2 chainrings, just moved the chain over when i put slicks on.

i try and ride mtb nearly every weekend only a 35min train ride away from dorking station and the surrey hills which has some of the best trails in the south east (probably the best, better than swinley, epping and the south downs. you probably have to go as far as the quantock's to get better riding.
