I'm running a pair of 44mm wide drops chopped and flopped, wrapped in the specialized phatwrap bar tape (one with squidgy gel pads) and I find the great, just enough width on the flats and just enough length to the horns. as for brakes I'm using one of the specialized cross top brake levers (£15/pair from LBS) these are a split clamp that fits around the grip section (not centre clamp area) of the bar. I only run one lever but you could clamp the other to the very end of the bars like a slightly uglier version of the aero end fitting brake levers (which wouldn't fit as the ends of the chopped bars are anything but round) and use the flat bar one as an interruptor lever so you have a brake lever in both hand positions.
