Oh yes you do !
If you crack the iPhone - you would generally then disable the automatic updating as well as sew up a few of Apple's security oversights (like the TIFF exploit that allows the phone to be cracked in the first place).
** I am using 'unlock' / 'hack' / 'crack' interchangeably here.
