If you want super light it's got to be sprints/tubs or eff-off expensive collapsible carbon jobbies.
I can't be bothered with tubs, can't afford/don't want carbon, and am not riding in many situations where it matters particularly. I'm well happy with my Open Pros/Chorus-SystemEx Hubs/32 double-butted spokes/butyl tubes/Tricomp-ProRace tyres setup, and I regularly coast away from people on geared descents that should fall faster with their extra bodyweight and deep-section rims.
Maybe if I got into a veteran's track league in a few years time, I'd invest in a set of sprints/tubs for a track-only bike, but in the meantime if I want to accelerate faster, I do some explosive training, carrry fewer tools or less food & water, and lay off the booze and cakes for a fortnight :)
