Hybrid/commuter/city bikes. Not all of 'em have riser bars. XC bars like the cheap ones posted above will be lighter.

A shim is a small piece of metal designed to increase the diameter/fit. The Nitto bars are 25.4mm and most road stems have a 26.0mm clamp diameter, so you need a something thats .6mm wide to fill the gap, a la a 'shim'.
The coloured flat bars are most likely mountain bike bars which have been cut-down, so go hunting in MTB shops. Again, MTB bars are most likely to have 25.4mm diameter (so you'll need a shim) or 31.8mm (oversize), which means you'll need a new stem.

I should have asked...wanted to replace my model 21 nitto by a straight one last month.
the girl in BLB told me its very difficult to get..
no I have ugly noname alu bar on that cost me 8 quid... 5more and it could have been nitto again grrr -
