the cranks: they look cottered?
the bars: just undo the stem clamp bolt more, you can carefully lever the jaw apart a bit more if you need to. They went in that way, they'll come out that way!
stem: wd40 undo the allen bolt on the top, not too much just so it's loose. carefully beat the shit out of the stem with a wooden or rubber mallet
