Danish kroner
Phew! Although when I was in Kopenhagen last October, I noticed that the knives were more expensive than at my cornershop in Amsterdam. And the difference wasn't just the 25% vat ;)

Lovely haul!
However, this photo is also the answer to 'what 3 knife and/or accessories should not be used together?' -

You certainly are! Is that handle made from recycled Malden sea salt tubs?
Saw on here (I think) some knives with those handles. Still very tempted. -

Very nice! I’m really thinking of picking up a Horl as everyone seems happy with them. I have the same chopping board super nice.
Lovely looking knife too 😁 -

Please don’t use a serrated blade on a soft hasegawa. You’ll ruin it.

Your a sweaty blade

To my horl boys on this thread - do you recommend?

Bitch please, I’m not going to use a serrated knife on a fancy Japanese chopping board.
@Tenderloin not actually a Horl, but Ali Express version… Not used yet, but I’d probably chop off my fingers, being 10 pints down

I picked up an Amazon knock off rolling sharpener for £30 (chosen as it was one where replacement discs are on Amazon) with the intention of sharpening stuff before Christmas dinner.
Obviously ran out of time and only managed to sharpen one knife as a test but it seemed decent from that.

From the comparison videos the knock off ones are not robustly made, the grit (for want of a better word) wears out pretty rapidly. Also the Horl ones have the further levels of refinement, up to the Kagami stones which are ridiculously fine.

100% - dropped a quick note on it before.
Be careful about taking off too much metal and you’re all good.
Easiest method for very sharp knives I’ve tried.

Do not try to test you knives sharpness on your arm hair.

Bought another knife. First non Chinese cleaver I've bought in a while but the flat profile and slightly tall height tempted me.

What one do you have/what’s your setup after a while of use?

I went all in and got the classic, premium set, the coarse disc (it’s great for rapidly resetting and old knackered blade) and the kagami for my super nice knives.
The classic will take most knives to shaving sharpness.
Once knives have been done once the resharpening becomes much easier. Before going to the next finer stone it can be really good to do a single pass on each side of the blade with the single diamant just to remove the wire.

Sure, but if the knockoff ones are less than a third of the price of a Horl. You can do a lot of knives with 3!

I got my brother an Opinel Brunch Knife and he sent me a photo spreading Lurpak on a slice of white supermarket bread. Unfortunately not trolling.

More like a fifth of the price.
Saying that, the knock-off I got you can buy 4 replacement discs for a tenner which should extend the lifetime a bit.

I did my research and asked for this one. Not had a chance to use it yet but it’s solid AF, all the stones, strong magnet etc

I’ve seen these on ig. They look nice to use and presumably very consistent.
Danish kroner.
Cheers. It's a bit weird, the suncraft actually. Quite a modern industrialised take on the aestetic, but also very refined and sleek.
