I think I'm giving them too much credit. It think it's literally just looking for keywords.

A couple of years ago, I asked my iPhone: "Siri, shut yourself off"
It replied "I'm sorry Peter, I'm afraid I can't do that"
Tried to replicate this a couple of times afterwards, but never got that answer again. I thought it was funny though.
