Oh, any idea what model name the brake pads would be for some old Deore calipers? Have they been standard forever (haha) or will I need to pull them and take photo?

There's a code on the other side of the caliper, that'll give you the definite answer to what pads you'll need.

Deore comes in non series, 4XX to the current 6XXX so just by the name both B and G applies!

Yeah, I need to have a closer look.
Maybe I'll clean it (ROFL) and find some serial numbers.

I'd like to get the GRX cranks installed but I don't want to get half way and find I can't make something work and then not be able to reinstall them, ie. because I don't have a long enough 10s chain...
