Pair!
Maybe my pricing is a little out of date, I think I paid £60 or £65 at a local cobblers in London for a pair of red wing chuckas to be resoled in white vibram. That was a couple of years ago.
Some people here have more recent intel.

In which case I would like to add a note of caution to the recommendations above for 'Cobblers Nest'. He is charging me £160 for the pair. TBH I was blindsided by the quote and just agreed because it was quite a walk from my office and I want them resoled ASAP. He actually said £180 first then said he'd do them for me at £160. In hindsight it felt like he was just quoting as high as he dared and expecting some pushback, but I was not expecting that sort of negotiation and blindly accepted.
