I haven't used GP5000 all seasons so I can only compare to the regular version. The Mondo's are definitely slower. I've not yet tried them on a 'fast' ride to see how they stack up but they haven't felt sluggish on my commutes / long rides.
When I bought the Mondo's they were about £20 a tyre cheaper than the GP 5000 AS ones so that clinched it, if price wasn't an issue I would have gone GP As.
I had the Cinturatos found them really sluggish and unpleasant to ride. I'm currently using some 35mm Specialized S-Works Mondo Tyres. They're much nicer to ride and seem pretty hardy and long lasting. Not horrendous pricing either.
FWIW they were super easy to fit and set up tubeless.
