  • That’s a great offer, I did wonder if buying direct from the source would me a bit allowing me to get better for my money. I’ll definitely consider it. I wish I’d known back when I visited Japan I would be in this situation now I would have been filled my boots.

  • I've bought a couple from Kataba in Covent Garden, really nice shop & I've spent a considerable amount of time in there feeling all the knives up.

    I bought a Santoku first then got a petty & a Gyuto but really I think I could do 95% of my cutting with just the Santoku.

  • Buying in to this world opens up a whole other load of spending. Will definitely need to up my sharpening game with whatever the best method or device I’ll need. New chopping board, and of course a nice new wall mounted wooden magnetic knife strip to replace my cheap Ikea metal one. I could easily go overboard with all this which pushes the budget no end.

  • I’ll try and get there to check them out. Spending one day in the big smoke tomorrow, lived up there for almost 20 years before moving back down to Devon so visits are few and far between. If I can take in a shop or two I’ll be like a kid in a candy shop.

    If you don’t mind me asking, which make of knives did you get?

  • The story is he is a relatively young knife smith and he's trying to enter the market with the low prices. Also his finish is a raw kurouchi so no bling finish means all your money goes into the forging process. Aogami steel is top notch imo, so for that price you can't go wrong. I see a few santoku's available on a couple of webshops, but for the rest it's all sold out it seems indeed.

  • I’ll definitely keep looking in the hope stock starts to appear. It is such a fascinating world I’ve become obsessed looking at knife after knife, pretty sure my wife thinks I’ve got a screw loose.

  • Two of them were made by Muneishi, not sure about the petty as it was a gift and I can't read the writing! I'm fine with non-matching as I just wanted all kurouchi finish so they all look similar but have different handles.

  • My OCD side would like matching but in this case I could be swayed to have a mis-matched collection to get the I can for my money. I agree though a matching finish on all knives would be a bonus, definitely into the Kurouchi/Nashiji finishes

  • SAK question. I have an Officier Suisse knife which was horribly mutilated by my late FIL (58mm blade). I'm not really the sentimental type but I would like to have it returned to good as new condition. I've printed the form to send it to Northampton for repair but was wondering if anyone "on here" would or could do it for me? I remember a long time ago there was talk of swapping components and scales about or did I imagine it?
    I could buy a secondhand one for about £20 but that defeats the object a bit.

  • I would double check their repair policy. I had a SAK replaced with a similar model as it was deemed an uneconomic repair, this only half suited me.
    If the only damage is that blade id just grind it a bit smoother whilst keeping it cool to preserve the temper.

  • A more technical answer is that the tools, springs and liners are held together with pins that are then peened over. The red scales then clip onto the ends of these pins, this requires a fairly fine tolerance.
    The people modding them are using long thin torx bolts and different scales.
    Replacing the main blade is doable but it would be an effing fiddly job to do and get the clamping force right so the blade opened smoothly. Then probably play around with the scale so it fits, (or just glue it)

  • Cool, cool. Knowing use case and history is always useful. Sounds like you've picked styles that work for you so just go shopping.

    Id definitely spend time working out where to spend your budget. A half decent petty will probably be £60 freeing budget elsewhere.

    If you aren't going to work out a system for keeping knives sharp then I'd consider whether the outlay is worth it.
    Look at sharpening services or have a go yourself. Start with the knives you currently have, but blunt knives are spatulas and I'd not spend £300 on spatulas personally.

  • Can you consolidate two into one and stretch to a Blenheim Forge santoku?

    I would happily keep mine in exchange for every other knife in my kitchen, if I had to make such a confected decision. Including the bread knife.

  • I've not had it all that long (3 months); so far I've just given it a very gentle run down the steel after use.

    I anticipate I'll need to use a stone soon but I'm always a bit apprehensive first time I sharpen a new knife on a stone, as I think that I'll screw it up.

  • A Blenheim Forge Santoku would be the dream. Think realistically though I can justify that kind of spend to my wife on two knives more than one mores the pity.

  • Anyone interested in a CCK 1101 chinese cleaver for £60 posted? Its the 240mm x 120mm carbon steel slicer.
    Bought from a forumenger recently, and although the knife is wonderful, it doesn't quite work with my worktop/chopping board/short height combination. My elbow ends up being too high with this one.

  • Take it to the Victorinox shop on Oxford St. When they fill out the form make them note “return if not repairable, sentimental” and you can avoid the replacement issue.

    I’ve had a handful go through there and the most it cost me was a tenner. Most only cost a fiver.

    Pretty much what these may end up being used for. They came in a lot today from auction. I only wanted the marlin-spike WWII jack knife, so I’m at a loss what to use them for except extreme veg prep.
