Looking at that picture, is it not a reversible piece? In one way for 130mm and reversed for 135, so possibly the one you already have can be used?

I presume the R and M are for road and mountain

I don’t understand what that bit does.

There’s a silver insert that spaces the non-drive side drop out away from the turbo according to the vid I’ve just watched on YouTube.

Don't watch videos, Wahoo change the inserts they provided on a whim so chances that yours is the same as the video are quite slim. If the insert is flippable, it will just pull out of the trainer, no need to unscrew anything.
