Today's setup (not mine). Ate the owner's cow, pig and sheep.

It was an oyster mushroom cluster. I need to find a good supplier or mushrooms as the mushroom was the unexpected star of the meal.

My friend Anthony grows regular, pink and blue oysters, plus shiitake and lion’s mane. Not sure if he posts them though, worth an email to find out

This is the "throw money at the problem" answer: https://www.fineandwild.com/collections/wild-mushrooms
I'm crossing my fingers that it's a good shroom season. Last year I was lucky with finding chanterelles/ tromp de mort/ porcini / hedgehog mushrooms.

Not cooked by me but so, so tasty. We added another 250g of brisket lean as we tore through the first lot so quickly. Rendering on the beef was immaculate, jalapeno cheese sausages a classic and the size of the sides belies the fact three of us didn't get close to finishing it all.

Big T BBQ - it's a warehouse in the middle of an industrial estate in Dubai.
His food is what opened my eyes to 'proper' BBQ. I'll never not rate it.

Haha those days are well behind me. For anyone interested I can report that Charlie is available on every street corner in Playa D’en Bossa and tickets to see David Gutter at the old Space were going for €100 last night!

I’m looking forward to getting one of the small Fire Made versions of this Parrillio grill ^ next year when a) the weather is better and b) I’ve got somewhere to put it.

Someone had one but when I went back to look at the pics they’d flounced and I can’t remember who.
They’d added a rotisserie to the front too which looked banging. Found it. -

Flounced but back, love it but have been really busy this summer so not had much use.
I did a cooking day with the maker a year or so ago, it was an amazing day.

Awesome, glad you’re still around because I’ve taken a lot of inspiration from your posts. I have an old pre-fab workshop that needs demolishing over winter so I can extend the garage roof over the remaining base to create an outdoor cooking area that I won’t have to stare at from the house. No point investing in one of these to watch it rust over winter!
Side of salmon! Can cure it first for a few days.
