  • Smashburgers are about two things:

    • more surface area gives a better taste as more of the meat is seared
    • allows interleaving the (American) cheese into the patty so you get meat/cheese/meat/cheese/meat/cheese/meat

    Take a single patty, smash it out into something 4 times as big, sear it, add two slices of plastic cheese, fold in half, add another slice of plastic cheese, fold in half again.

    Can't make them at home easily as I don't have a griddle, making them one or two a time in a frying pan just isn't as fun.

    Mmm. Trans fats.
