Go down to the local garage, ask nicely to use their vice and bring a couple of beers.
I however do not endorse the cog in a vice method.
I have a Unior chain whip which at 350mm gives additional leverage to remove even the toughest ones.
Failing that, the Brompton seatpost cheater bar for even more leverage.

I’ll soon be in possession of a mixture of Record and Chorus EPS. It has seen better days, on a bike sat on a balcony year round.
So bolts have surface rust and the black carbon / plastic surfaces are faded by the sun. I’m happy dismantling everything to get to bolts etc, but what’s the best method of bringing colour and shine back to the black parts?

AFAIK is the same hose for MTB stuff. Plenty of aftermarket options, but you'll need olives, inserts etc

Unless it's got a crimped fitment on it somewhere, you can use any hose

Just bought a 4700 crank to replace my 6800 because that was the only 165mm crankset I could find under 100 quid. What I've read is that they are compatible, notwithstanding the 10/11 speed difference. I'm not quite understanding why there would be separate 10/11 speed chains if the width of the teeth is interchangeable - is the narrower chain necessary because of tighter cassette spacing on the 11s?

Yes. The inner width has stayed the same since 9-speed, but the pin length keeps getting shorter to fit between the cassette sprockets.
