Cafelat people, I'm happy with everything in my technique now except pull time, which is the last pwrt. I don't have scales, I usually pull the shot until the arms are an inch or so from the legs, but now I'm worried I might be over extracting.
What are people doing here? Just time?
I pull until the coffee reaches 5-8mm from the faceted edge of a wee Picardie glass. Science!
Interested to know where your arms stop for that.
