Beetroot wash and a rub with olive oil. Place in the hot coals to char on the outside and then keep in the chamber to cook through.
Spuds test like roast spuds, par boil with bicarb of soda and some hard herbs (rosemary bay etc)
Place in dish under protein while it cooks to get the delicious Smokey rendered fat dripping down. While the protein stands to test crank up temp to crisp up the potatoe exterior. Possibly add cloves of garlic in the last phase (not peeled but lightly crushed) to add a little more flavour.
Edit I realise you are planning on grilling kebabs. So my suggestion for spuds isn’t useful.

I like the shiny glaze on the bbc one but I use less bbq sauce and opt for some additional rum, soy and lime.
The marinade time is key I find and I slash the skin so the marinade can all the way through

I guess this is food thread really but I love this little Japanese grill top I picked up for burning chillis, aubergines etc.
So much easier than pissing about with tongs and slippery veg.

I did one at a place in Edinburgh that was very good, but now out of business as they couldn't find a location. The real benefit was getting access to the community rather than what they said on the day.

My wife saw the wanky bear claws (eBay £3) and grassed me up to the neighbours.
Thanks, I haven't seen them for sale here, will have to keep an eye out. Once we've bought the furniture for the new deck I know I'm not gonna wanna splash out on a bells and whistles BBQ.
