Old as fuck beers like gose has salt in it, wheat beers exist - often with added coriander.
Nowadays German craft beers have all kinds of additions. I don't know legally what the standpoint is (read wiki) but the purity laws seem pretty optional. I presume only the really old breweries with limited products care about adhering to them.
Not a clue, but people go on about those laws and that is a reason Germans don't do fruity beers any way I'm more of a Belgian fruity beer person
