But I don't think I could be bothered with the faff, and I own a siphon brewer!

I can see how not having the coffee continuously submerged in the water could possibly help with not imparting some of those duller flavours often associated with cold brew. Might rig up a DIY version and see how it tastes!

A few years ago, I borrowed a Puckpuck attachment to slow drip into an aeropress from a friend. Similar principle but a fraction of the cost. I preferred classic immersion coldbrew like the Mizudashi linked above. In truth, I don't think I'd enjoy either now though. Much prefer a normal coffee poured over ice.
