Would you be able to get your preferred type of bars that would fit a quill stem?
In a word, yes! You're right that it is more limited, but fortunately for me it's more limited to the kinds of bars I prefer, which is namely older style bars with a long reach, flatish ramps and maes type bend (or sometimes rando bars) and I'm quite fond of the Nitto Noodle as well.
Most of the decent bars of that nature are available with 25.4mm or 26.0mm clamps, if anything it's harder to find them in 31.8mm, if you want to use a modern stem you often need to use a shim.
