I'm very interested in this! Planning to do the same. I've got a 6sp on the way to me and I was going to get the same front bag. What saddle bag is that and what water bottle setup please?

Cool! the bag is carradice odyssey (the xl one)
The bottle cage is iirc this one from sjs (https://www.sjscycles.co.uk/bottles-cages/alloy-xl-bottle-cage/). Its mounted on a bike backing bottle mount (secured with electrical tape). Works fine with a nalgene and folds fine.
Edit: this is the mount (I dont use the velcro thing)
