Dare I open up a can of worms and ask what groupset you all prefer? I might be building a winter/gravel/off road bike beginning of next year. I've got Sram on the BMC, I had Sram on my Rondo and the Focus CX... I think the last time I used Shimano is when I used to mountain bike... and that was because it was the only real groupset around. I'm not even thinking about an electronic groupset and up to a point, was thinking of Klampers or Yokozuna brakes.

Frame is looking like it's gonna be a Mason Bokeh

If you're using it as a winter bike I'd go 2x. GRX Crankset with 48/31 chainrings and a SRAM 11-36 cassette at the back will you give all the range you need.

Also if you want to use mechanical disc brakes, just use 105 cable shifters instead of GRX ones.
