  • I find the joke of them is the day after the bake a standard knife is what I'll go for, maybe it's the quality of my bread, but a pork belly has the bread (Victorinox pastry) knife and standard knife thrown at it

  • Bread knifes; this is ours. It was Liz’s grandmother’s it’s stainless, French and has never been sharpened and is the only thing I’ve used that can cut a thin slice of fresh bread.

  • Yeah the paring knife was almost free when compared to buying them separately and they were the two sizes I've been looking for anyway.

    Considering that I'd been looking at almost double that price I'm pretty happy. I'll hopefully update with my wife's seal of approval.

    I don't cut bread very often, but when I do, I have a cheap Mercer Culinary one. Great for cutting bread and cake etc, ugly as sin though, so its hidden in the drawer.

  • One option to consider is a bread knife with an offset handle. Fantastic for cutting bread and will make very short work of leafy veg prep - cabbages and lettuces - and even tomatoes if kept sharp.

    I use one of these handheld style sharpeners - it runs along the serrations just fine.

  • I buy them in when I go back to the US. Accusharp is the brand I have. Lots of options available online. The one I posted is a Victorinox copy of the Accusharp one.

  • Function > Form. But I get it.

  • To sharpen a break knife just use a stone on the flat side of the blade. This will sharpen the serrations just fine.

  • It was only when I got a decent knife sharpener that I started using the Japanese knives I had been given. Once that happened it opened the floodgates and the decent knives are no longer in boxes in a drawer but on a knife stand on the worktop.

    I really love the satisfaction of using the nicer blades but also have a tap next to wear I do food prep and a dry microfibre cloth. So now I have a good routine of rinse and wipe down the blade before I put it down. Of course I occasionally forget but generally the routine happens, the knives stay sharp and are in decent nick.

    If I am preparing meat on a bone or chopping nuts I will still use a standard western stainless steel blade. I have stopped trying to rock chop with Japanese blades as I did slightly damage the edge of one but so far touch wood I haven’t shipped or snapped a carbon steel knife.

  • Tbf, it used to be great but is shit now. Maybe I'll just learn how to sharpen it and sack off getting a new one.

    I own two beautiful handmade Japanese knives that don't get used either. My OH isn't very careful with stuff so I keep them tucked away because she will wreck them. I came home one day to find one of them on the counter next to a cut lemon, I almost had a stroke. I know I'm a fussy cunt but she takes the piss. 🤣

    I probably need a special knife block with a lock on it. I have three IKEA knives that I use for everyday stuff, a paring knife (which OH bent the tip on opening a jar), chef's knife and cleaver. OH will pull any old knife from the block, filleting knife, bread knife or even a palette knife to cut a piece of fruit. I've learnt to accept it. She's destroyed at least three of my dad's old Sabatiers.

  • Different league entirely but similarly I replaced our Opinel Kitchen knives with the plastic handle versions to save my frustration at finding the wooden handled ones left soaking in the washing up bowl.

    I once found the (then) missing peeler from the same set in the garden compost bin.

    I was gifted a Niwaki that is stored elsewhere.

    I will not buy better knives that need any level of care.

  • We have two magnetic knife blocks in the kitchen.

    One mounted on the wall that has "my" knives on it.

    One in the counter that has the shit knives on for everyone else to use.

    Other family members are allowed to use my knives but they get two strikes before being banned from using them for a period of my discretion.

    It does mean that our kitchen looks like an armory, but I'm down with that.

    Fortunately my OH's favourite knife is a £10 Kitchen Devil vegetable knife. So long as that's within reach, most other things are fairly safe.

    If I was sufficiently organised, this is what I would have.

    As it is, I have mainly functional knives and accept a level of jeopardy.

  • My step dad bakes loads of bread, I got him a Jono Knife which he absolutely loves. He's had it for a couple of years now and uses it most days.

  • Fabulous knifes, my only fear is I’d come home to find the MiL using it to cut doweling for a craft project.
